Every few months I vow to eat more fruits and vegtables. After watching Jennifer Cornbleet’s Raw Food Made Easy video I felt inspired to eat more raw foods. So I dug out the tools of the trade: food processor, blender and juicer.
Fruit smoothie
Pop the following items into your blender and liquefy. This simple no-frills smoothie packs in 3 fruit servings – a great way to start your day.
an orange
a banana
frozen blueberries
ice – 6 or 7 cubes
water – 3/4 cup
Optional protein boosts: ground flax seeds, raw sliced almonds or protein powder (whey or soy)
Juice is a great way to pack in more fruits and vegetables. If you have a juicer, dig it out and put it to work. If you don’t have a juicer consider borrowing one. Try it, you might like it.
Apple carrot juice (use your juicer)
an apple
6 large carrots
chunk of ginger
1/3 or a lime
Veggie juice (use your juicer)
cucumber, celery or tomato
green leafy veggie such as kale or spinach
(add apple for a touch of sweetness)
Another idea I picked up from Jennifer’s video is making nut spreads. I made this yummy pesto nut spread.
Pesto nut spread (paté)
lots of fresh basil
parmesan cheese
one clove of garlic
olive oil
salt
pine nuts
cashews
I soaked the cashews in water for a few hours. I’m not sure if soaking is absolutely necessary since cashews are soft, so you might experiment. Drain the water and add the cashews to your food processor. Add the rest of the ingredients: pine nuts, fresh basil, garlic, parmesan, olive oil and salt and pulse away. Once everything is the consistency of tuna, taste it and adjust the ingredients to your taste. That’s it! Spread on crackers or wrap up in lettuce.
Sound expensive? Really it’s not. Buy things on sale and don’t buy too much (no waste). Fresh fruit and vegetables are cheaper than the standard American diet of meat, dairy and processed foods.
